Spanish Rice Hot Dish

Ingredients

  • 3/4 c. raw rice
  • 1 Tbsp. oil or margarine
  • 2 medium onions, chopped
  • 1/2 green pepper
  • 1 lb. lean ground beef
  • 1/2 c. grated cheese
  • 1 can tomatoes
  • 1 bay leaf
  • 1/2 small jar stuffed olives, cut in half
  • 1/2 can peas or cooked frozen peas
  • dash of celery salt
  • salt and pepper

Directions

    Cook rice, rinse and drain.

    Saute onions and green pepper in oil until tender.

    Add ground beef, fry until tender.

    Drain off fat.

    Stir all together and place in casserole.

    Sprinkle grated cheese on top.

    Bake at 350° for 45 to 60 minutes.

    For large family use 1 1/2 cups rice, 1 1/2 pounds ground beef, whole can peas, whole jar olives and whole green pepper.
