- flour (enough to make thickening for top)
- 4 Tbsp. chopped onion
- 4 Tbsp. chopped green pepper
- 4 Tbsp. butter
- 1/2 c. celery, chopped
- 2 c. tomatoes
- salt and pepper to taste
Directions

1Saute the green pepper, celery and onion in butter until soft. Add tomatoes; let simmer for 15 minutes.

2Season to taste with salt and pepper.

3Thicken mixture with flour and water thickening. Cook for 5 minutes.

4Pour over omelet.
