Spanish Yellow Rice

  • 2 cups Water
  • 2 tablespoons Tumeric
  • 2 tablespoons Butter
  • 1 Yellow Bell Pepper
  • 1 Red Bell Pepper
  • 2.5 cups Yellow Spanish Rice
  • 2 tablespoons Olive Oil
  • 2 cups Chicken or Beef Broth
  • 1 teaspoon Salt
  • 1.5 cups Optional: Frozen Peas
  • 1 Optional: Minced, Small Onion

Directions

    Bring water and tumeric to a low simmer in order to incorporate together

    Melt butter in a large pan
  3. 3
    Add peppers and onion to butter. Saute until onion is translucent.

    Add uncooked rice and olive oil. Stir rice until the olive oil, peppers and onion become golden colored.

    Add Chicken/Beef broth, Tumeric-Water mixture, and Salt

    Bring to a slow boil until all liquid is incorporated. Stir occasionally.

    If adding peas, cook the peas and then add into rice mixture

    Serve with chicken, steak or shrimp.
