- 4 servings hot Minute rice
- 1 1/2 c. chopped green pepper
- 3/4 c. thinly sliced onions
- 3 Tbsp. salad oil
- 1/4 c. cornstarch
- 2 c. chicken stock
- 3 Tbsp. soy sauce
- 2 c. slivered cooked chicken
- 3 ripe tomatoes, cut in thin wedges
Directions

1Prepare Minute Rice as directed, keep warm.

2Meanwhile, cook peppers in oil in covered skillet over low heat until tender, but not browned, also the onions at the same time.

3Blend cornstarch with a small amount of chicken stock.

4Add remaining stock and soy sauce and cornstarch mixture to vegetables.

5Add chicken and cook until sauce is clear and thickened.

6Add tomatoes and cook.

7Just to heat.

8Serve on rice.

9Makes 4 to 6 servings.
