  • 7 ounces shortbread cookies suggested: half Speculoos and half spritz cookies
  • 3 1/2 tablespoons melted butter
  • 2 1/16 cups ganache white chocolate caramel
  • 4 bananas according to their size
  • heavy whipping cream 35 cl., mini 30% MG
  • 2 tablespoons powdered sugar
  • cocoa powder

    Crush the biscuits by putting them in a freezer bag and crushing them with a rolling pin.

    Melt the butter and mix with the cookie crumbs.

    Spread this mixture into a large or individual pastry rings... Put in the refrigerator for 20 minutes.

    Pour a layer of white chocolate caramel ganache on the shortbread base.

    Peel the bananas, slice them, and spread them on the caramel. Chill.

    At serving time, whisk the heavy cream until it becomes chantilly, while adding the powdered sugar.

    Remove the pastry circle, and pipe the cream with a pastry bag.

    Sprinkle with cocoa powder.
