- 3 cup gluten-free all purpose flour (or regular flour)
- 3/4 tsp xanthum Gum (if you use regular flour, you don't need this ingredient)
- 2 tbsp sugar (or sugar substitute, such as splenda)
- 1 envelope Rapid rise Yeast (1/4 oz)
- 3/4 tsp salt
- 3/4 cup warm water
- 2 tbsp olive oil
- 1 egg
Directions

1In a large bowl, 1 1/2 cup flour, xanthum gum, sugar, yeast, & salt.

2Stir in water, oil, & egg until blended.

3Stir in enough of the remaining flour (about 1 cup) to form a soft dough.

4On a floured surface, knead dough until smooth & elastic, about 8 minutes, adding more flour to prevent sticking.

5Shape into a ball.

6Place in a large oiled bowl, turning to coat.

7Cover loosely with a damp cloth.

8Let rise in a warm place for 15 minutes.

9Spray a 9-inch square baking pan with cooking spray.

10Punch down dough.

11Place in prepared pan, patting to an even thickness.

12Cut into 12-16 squares.

13Fill a large shallow pan with 1 inch of boiling water.

14Place a wire rack on top.

15Place the pan of rolls on rack, cover with a damp cloth.

16Let rise for 20 minutes.

17Preheat oven to 400F.

18Sprinkle top of rolls lightly with flour, if desired.

19Bake until rolls sound hollow when tapped, about 10-15 minutes.

20Place pan on wire rack & cool for 10 minutes.

21Serve warm.
