  • 4 c. walnut meats
  • 1 c. sugar
  • 1 tsp. cinnamon
  • 1/4 tsp. mace
  • 1/2 tsp. ginger
  • 1/4 tsp. cloves
  • 1/2 tsp. salt
  • 1/2 c. water
  • 1 Tbsp. butter
  • 1 tsp. grated orange peel

    Place walnuts on a cookie sheet in a 325° oven.

    Toast 15 minutes and cool.

    Combine sugar and spices in a 2-quart pan.

    Add water.

    Heat to boiling with cover on.

    Boil 3 to 4 minutes. Uncover and boil to soft ball stage, 236° on a candy thermometer. Add butter and orange peel.

    Stir until creamy; add walnuts and stir until coated.

    Turn out on a cookie sheet lined with wax paper.

    Separate as soon as you can handle nuts.
