Spiced Apple Chutney

- 1 lb onion, minced
- 5 lbs apples, peeled and chopped
- 1 1/2 cups water
- 1 1/4 teaspoons ground ginger
- 2 teaspoons coarse salt
- 1 1/4 tablespoons dry mustard
- 10 cloves
- 8 whole allspice
- 2 cups vinegar
- 2 1/2 cups brown sugar
Directions

1Mix together the onions, apples, water, ginger, salt and mustard in a large saucepan.

2Put the cloves and allspice into a muslin bag and add to the saucepan.

3Bring to a boil. Reduce heat and simmer for 45 minutes.

4Stir in the vinegar and sugar and simmer uncovered for 1 1/2 hours.

5Remove the muslin bag and when cool, pour the chutney into sterilized jars and seal.

6May be eaten in a few days.
