- 10 large, firm, tart apples
- lemon juice
- 4 c. sugar
- 4 tsp. whole cloves
- 6 (2-inch) sticks cinnamon
- 2 c. white vinegar
- red food coloring
Directions

1Pare apples, quarter and core; cut each quarter into 3 thick slices.

2Place in a large bowl of water and lemon juice.

3Combine sugar, cloves, cinnamon sticks and vinegar in kettle; tint bright pink with food coloring.

4Heat to boiling.

5Simmer 10 minutes. Drain apples; add enough syrup at a time to make one layer deep. Heat to boiling.

6Cook 2 minutes or just until apples are tender. Pack into hot jars.

7Process 15 minutes in water bath.
