- 2 pounds Butternut Squash
- 2 Tablespoons Canola Oil
- 1/8 teaspoons Ground Ginger
- 1/4 teaspoons Nutmeg
- 3/4 teaspoons Cinnamon
- 3/4 teaspoons Kosher Salt
- 3 Tablespoons Brown Sugar, Packed

1Preheat oven to 400 degrees F.

2Mix the ginger, nutmeg, and cinnamon in a small bowl and set aside.

3Peel and seed the squash, then cut into 1-inch pieces. Next, place squash and oil into a large bowl, and coat until well coated. Move squash onto a large baking sheet and spread out in a single layer.

4Sprinkle spice mixture, salt, and brown sugar evenly over the squash. Roast in the oven for 25-30 minutes. You may need to shake or stir the squash halfway through to cook evenly.
