Ingredients
- 2 (16 oz.) cans chunky mixed fruit in juice or lite syrup
- 2 Tbsps. brown sugar
- 1 Tbsp. cornstarch
- 1/2 tsp. curry powder
- 1/2 tsp. dry mustard
- 1/2 c. small pitted prunes
- 1/2 c. dried apricots
- 2 Tbsps. chopped peanuts, if desired
Directions

1Drain fruit, reserving all liquid in a saucepan.

2Set fruit aside.

3Mix brown sugar, cornstarch, curry powder and dry mustard with reserved liquid until well-blended.

4Stir in prunes and apricots.

5Cook over medium heat, stirring frequently, until mixture boils and thickens.

6Add drained fruit.

7Continue cooking, stirring occasionally, until mixture is just heated through.

8Serve immediately; garnish with peanuts, if desired.

9Makes 4 servings each with 162 calories, less than 1 g. fat and 0 mg. cholesterol.
