Spiced Mashed Sweet Potatoes

  • 4 whole Medium-sized Sweet Potatoes, Scrubbed, Peeled, And Cubed
  • 1/3 cups Heavy Cream
  • 3 Tablespoons Orange Juice
  • 1 teaspoon Chili Powder, Plus More To Taste
  • Seasoning Salt Or Salt And Pepper, To Taste
  • Milk Or Chicken Stock, If Needed To Adjust Consistency (optional)

Directions

    Cover the potatoes with water in a large pot. The water should come 1-2 inches above the potatoes. Bring the potatoes to a boil, and remove the lid.

    Let boil for 15-20 minutes until very tender. Drain, and put the potatoes back in the same hot pot.

    Over low heat, add the heavy cream, orange juice, chili powder, and 1/2 teaspoon salt or seasoning salt (my preference) to the potatoes. Using a large spoon or potato masher, combine all ingredients until the potatoes are fairly smooth.

    Taste, and add more chili powder or salt according to your taste.

    If the potatoes are too thick, add a splash of milk or chicken stock to thin them out. If they are too thin, turn the heat up a bit to allow some of the liquid to evaporate as the flavors combine.
