  • 1 Tbsp. whole allspice
  • 2 tsp. whole cloves
  • 2 sticks cinnamon, broke in half
  • 2 3/4 cups sugar
  • 1 1/4 c. cider vinegar
  • 1 c. light corn syrup
  • 4 pounds ripe peaches, halved, pitted and peeled

    Tie allspice, cloves and cinnamon in cheesecloth to make a spice bag. In a saucepan stir together spice bag, sugar, vinegar and corn syrup. Bring to a boil over medium heat, boil gently 10 minutes. Keep syrup hot. Pack peaches into hot pint jars. Pour boiling syrup into jars, covering peaches, leaving 1/2 inch headspace. With a non metallic utensil remove air bubbles. Wipe rims with damp towel. Seal according to lid manufacturers directions. Process in a boiling water bath for 25 minutes. Cool jars on wire rack or folded towel. Makes about 5 pints.
