- 1 lb. pecans (halves)
- 1 egg white, with 1 tsp. water
- 1/2 c. sugar, with 1 tsp. cinnamon
Directions

1Beat egg white and water until foamy.

2Mix sugar and cinnamon together in a plastic bag.

3Put pecans in a large bowl.

4Pour egg white over nuts and turn over until nuts are all glossy.

5Pour sugar over the nuts and turn over until all nuts are covered. Spread nuts on a very liberally buttered cookie tin with 4 sides. Put in 250° oven for 1 hour.

6But every 15 minutes, turn nuts over on the tin so all get coated.

7At end of 1 hour, turn off oven but keep nuts in oven until oven is cold.

8This makes them crisper.
