- 3 slices double-smoked bacon
- 1 large onion
- 2 heads red cabbage, shredded
- 3 cloves garlic
- 1 tsp. caraway seed to taste
- 1/4 to 1/2 tsp. ground pepper
- 1 tsp. salt
- 2 large ripe pears, peeled and chopped
- 1 lemon, cut in half
- 2 c. red wine
- 3 Tbsp. red wine vinegar
- 6 oz. honey
- some brown sugar
Directions

1Dice bacon into very small pieces and brown in large, heavy pot until golden.

2Add chopped onion and simmer, uncovered.

3Add cabbage, garlic, caraway seed and 1/2 cup warm water.

4Cover and cook until cabbage starts to soften.

5Add salt, pepper, diced pears, lemon halves, red wine and red wine vinegar.

6Cover and cook for 15 to 20 minutes.

7Add honey and cook over lowest possible heat, at least 30 minutes.

8Cook longer if too

9much liquid is present, allowing it to steam away with lid off.

10Taste cabbage.

11If not sweet enough, add some brown sugar to your liking.

12Remove lemon halves.

13Cover and cook until cabbage is done.

14It should be about 1/3 of its original bulk.

15Adjust seasonings and remove from heat.
