- 5 teaspoons black peppercorns
- 3 teaspoons cardamom seeds
- 3 teaspoons cloves
- 4 cm (1 1/2 in)cinnamon stick
- 30 g (1 oz/ 1/3 cup)ground ginger
- Indian tea leaves
- boiling water
- sugar and milk, to taste
Directions

1Put peppercorns, cardamom seeds, cloves and cinnamon in a mortar and grind to a fine powder with a pestle.

2Add ginger and grind again for a few seconds to mix.

3Make a pot of tea and add about 1/2 tablespoon of spice mixture and leave in a warm place for 1 to 2 minutes to brew.

4Serve hot, with sugar and milk.

5Makes about 8 tablespoons spice mix, enough for 16 pots tea.

7Store remaining spice mixture in a screw-topped jar in a dark cupboard to preserve its flavor.

8It will keep for 2 to 3 months.
