  • 12 ounces long grain rice
  • 12 quart vegetable broth
  • 78 cup tomato sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 ounce flat leaf parsley, chopped (optional)

Directions

    Place the rice in a pan with the broth and tomato sauce.

    Bring to the boil, cover and simmer for 10-12 minutes.

    Take off the heat, stir in the cumin and chili powder, then cover and rest for 5 minutes.

    Fluff with a fork and serve scattered with the parsley if using.
