  • 4 dry bay leaves
  • 6 small red chiles
  • 4 large garlic cloves, peeled
  • vinegar of your choice (cider, white, malt, red or white wine type)

    Poke the bay leaves, chiles and garlic into a bottle.

    Fill bottle with vinegar of your choice.

    Leave in cool dark place for approximately three weeks to develop flavor.
