- 4 1/2 qt. white wine vinegar
- 1 whole nutmeg
- 1 small piece ginger root, peeled
- 1/2 tsp. whole cloves
- 2 tsp. mustard seed
- 4 Tbsp. salt
- 1 tsp. black peppercorns
- peel of 1/2 orange
- 6 shallots, quartered
Directions

1In large earthen crock or glass container with lid, combine all ingredients and stir to mix.

2Cover tightly and leave to steep in warm place or in the sun for 3 to 4 weeks.

3Strain into bowl, pressing to extract flavor.

4Pour through funnel into clean bottle and cork.

5Store in cool dark place.

6Makes 4 1/2 quarts.

7Good to use for seasoning grilled meat or meat marinade.
