Ingredients

  • 1 log Chorizo
  • 1 bag Simply Potato O'brian Hash Browns
  • 1/2 pounds Fajita Fresh Veggie Mix (pre-cut)
  • 6 whole Eggs
  • 1/2 cups Milk
  • 1/2 cups Sour Cream
  • 1 can Chopped Green Chilies
  • 2 cups Shredded Mexican Cheese

Directions

    Preheat oven to 375F.

    Brown the chorizo and drain well.

    Chop veggies to a smaller dice. (You can easily add more veggies.)

    Combine all ingredients in a bowl until well mixed.

    Spread into a 9x13 pan and cook for 45-55 min.

    Serve with sour cream.

    You can also use mild chorizo. This recipe doubles well.
