  • 1 teaspoon cumin powdered
  • 1/4 teaspoon salt
  • 2 chicken breasts skinless, deboned, and in strips
  • 3 cups lettuce assorted, in bite-sized pieces
  • 1 tablespoon olive oil
  • 1 lime
  • 1 clove garlic, finely chopped
  • salt
  • ground black pepper
  • 2 tablespoons roasted peanuts

    Mix the chili, cumin, and salt. Cover the chicken with this mixture and marinate for 15 minutes in the refrigerator.

    Cook the chicken in a hot skillet. Set aside.

    Place the lettuce in a salad bowl.

    Mix the olive oil, lime juice and zest, and garlic. Season with salt and pepper to taste. Dress the lettuce with this vinaigrette.
