  • 1 poblano pepper
  • cajun seasoning
  • butter or margarine

Directions

    Grill poblano or roast on gas burner.

    Peel off skin; remove seeds and dice.

    Microwave corn until hot following package directions.

    drain.

    Add up to 1 tbsp Cajun seasoning (careful), or to taste and same with butter or margarine.

    Mix poblanos in and serve!
