- 1 large onion, chopped
- 1 Tbsp. light margarine
- 1 (10 oz.) can diced tomatoes and green chilies
- 1 (16 oz.) can whole kernel yellow corn
- 1 (16 oz.) can Shoe Peg white corn
- 1 (16 oz.) can cream-style yellow corn
Directions

1In saucepan, saute onion in margarine until tender.

2Add remaining ingredients, mixing well.

3Transfer to a glass baking dish and refrigerate at least 8 hours or overnight.

4Put in cold oven and bake at 325° for 2 hours.
