Spicy Corn Casserole

  • 1 large onion, chopped
  • 1 Tbsp. light margarine
  • 1 (10 oz.) can diced tomatoes and green chilies
  • 1 (16 oz.) can whole kernel yellow corn
  • 1 (16 oz.) can Shoe Peg white corn
  • 1 (16 oz.) can cream-style yellow corn

Directions

    In saucepan, saute onion in margarine until tender.

    Add remaining ingredients, mixing well.

    Transfer to a glass baking dish and refrigerate at least 8 hours or overnight.

    Put in cold oven and bake at 325° for 2 hours.

    Yields 8 servings.
