Ingredients

  • 2 (17 oz.) cans whole kernel corn, rinsed and drained
  • 1 (4 oz.) can chopped green chiles, drained
  • 1 (2 1/4 ox.) can sliced pitted ripe olives, drained
  • 1 large tomato, chopped
  • 2 to 3 jalapeno peppers, seeded and finely chopped
  • 3 Tbsp. white vinegar
  • 1/3 c. olive oil or vegetable oil
  • 1/2 tsp. salt
  • 1 Tbsp. chopped fresh cilantro (optional)

Directions

    Combine first 8 ingredients in a nonaluminum bowl; add cilantro, if desired.

    Cover and chill at least 2 hours, stirring often.

    serve with tortilla chips or as a relish with grilled beef or chicken.
