Spicy Cornmeal Cod

Ingredients
- 1 1/2 lb. cod, perch or other lean fish fillets (about 1/2-inch thick)
- 3/4 c. cornmeal
- 1/4 c. all-purpose flour
- 1/2 tsp. salt
- 1/2 tsp. garlic powder
- 1/2 tsp. dried oregano leaves
- 1/2 tsp. ground red pepper (cayenne; can only use 1/4 tsp.)
- 1/2 tsp. pepper
- 2 large eggs, beaten
- 3 Tbsp. margarine or butter, melted
Directions

1Heat oven to 500°.

2Cut fish into 4 x 2-inch pieces.

3Mix remaining ingredients except eggs and margarine.

4Dip fish into eggs.

5Then coat with cornmeal mixture.

6Place fish on ungreased cookie sheet.

7Drizzle margarine over fish.

8Bake 10 to 12 minutes, turning fish once, until golden brown.
