Ingredients: 1 whole mullet grey, about 1 1/2 lbs; 6 leaves kedra or rampe; 2 tablespoons corn flour; 8 ounces oil; 1 stalk lemon grass ground; 4 cloves garlic ground; 2 onions ground; 1 tablespoon ground chili; 2 teaspoons lemon juice

2 tablespoons corn flour
8 ounces oil
1 stalk lemon grass ground
4 cloves garlic ground
2 onions ground
1 tablespoon ground chili
2 teaspoons lemon juice

Clean and wash the fish. Rub all over with salt, wrap in kedra leaves and steam for 10 minutes over vigorously boiling water. Add a little water to corn flour to make a paste.

Remove leaves from the fish and rub all over with corn flour paste. Heat oil in a pan over medium heat and fry ground ingredients and salt to taste for 10 minutes.

Place steamed fish in a casserole and pour fried ingredients over it. Bake in a moderately hot 400 degree oven for 30 minutes until fish is brown and done. If necessary, put it under a grill for a further 5 minutes to make it crispy. Sprinkle with lemon juice and serve hot with a salad.

NOTE: The fish may be fried after steaming. Simply place it in the pan with fried ground ingredients and fry until brown. Stir ingredients carefully in the pan to prevent burning and to avoid breaking the fish. Serves 6.
