Spicy Okra

  • 1 pound okra--fresh or frozen with tips chopped off
  • 2 onions-- sliced lengthwise
  • 2 tomatoes
  • Spices in powder form: chilli powder, 1 tsp. turmeric 1/2 tsp. coriander powder, 1 tsp. cumin powder 1 tsp, garam masala 1 tsp, 1/2 tsp. pepper.
  • 2 tbsp. oil for frying (canola)

    1. Fry the onions till translucent.

    2. Fry the okra

    3. Add tomatoes after a couple of minutes of frying the okra.

    4. Add the spices and salt to taste.

    5. Cook for 30 mins with 2 cups of water till they evaporate.

    4. Add a dash of pepper at the end.
