- 1 lb pasta (we prefer mostaccioli or ziti)
- 12 cup chopped onion
- 2 tablespoons butter
- 2 tablespoons flour
- 18 teaspoon black pepper
- 2 12 cups milk
- 1 cup shredded cheddar cheese
- 1 cup shredded American cheese (we just tear up singles)
- 1 cup shredded monterey jack pepper cheese
Directions

1Cook pasta and drain.

2Meanwhile, in a medium saucepan, sautee the onions in the butter until they're soft (not brown).

3Stir in flour, pepper, and milk.

4Cook and stir over medium heat until slightly thickened and bubbly.

5Add cheeses a little at a time, stirring until melted and smooth.

6(At this point you can taste and add more of whichever flavor of cheese is lacking.

7For less bite, add more American cheese.)

8Salt to taste.

9Pour over pasta and stir.

10Transfer to a 2-quart casserole dish.

11Bake, uncovered, at 350 degrees for 25 minutes.

12Let stand 5 minutes before eating.
