Ingredients
- 4 lg. beets
- 3 c. onion, thinly sliced
- 2 1/2 c. cider vinegar
- 1 1/2 c. water
- 2 c. sugar
- 1 Tbsp. mustard seed
- 1 Tbsp. whole allspice
- 1 Tbsp. whole cloves
- 3 cinnamon sticks, broken
Directions

1To cook beets, wash and drain.

2Leave 2 inches of the stem and the tap roots.

3Cover with boiling water and cook till tender. Drain; cool to handeling temperature.

4Peel and jullienne. Combine vinegar, water, sugar and spices in pot and bring to a boil.

5Simmer for 5-10 minutes.

6Strain out spices and add to beets.

7Add onions and bring back to boil.
-
8Pack hot beets in hot jars, leaving 1/4 inch head space.

9Remove air bubbles and adjust caps.

10Process in boiling water bath for 30 minutes.
