- 1 medium Thai chili pepper
- 8 small pickling cucumbers
- 1/3 cup kosher salt
- 1 bay leaf
- 1 1/2 tbsp turmeric
- 1/3 tsp garlic cloves
- 1 tsp mustard seed
- 1/2 cup water
- 1 1/2 cup distilled white vinegar
Directions

1Boil the vinegar and water.

2Add cucumbers to jar

3Add pepper, and garlic to a liter jar that has been sterilized.

4Add bay leaf, salt, turmeric, and mustard seed to jar.

5Pour hot vinegar solution over the top of cucumbers till full.

6Add lid let cool.

7As it cools it will cause a suction and seal lid.

8Let sit 2 weeks.

9Refrigerate after opening.

10It will last as long as a regular jar of pickles
