Spicy Pounded Cucumber

- 2 Cucumbers
- 1 Dried red chili (sliced)
- 3 tbsp Vinegar
- 1 tbsp Sugar
- 1 tbsp Sesame oil
- 1 tbsp Soy sauce
- 1/3 tsp Salt
Directions

1Combine all the marinade ingredients and mix well.

2Add the red chili pepper.

3Wash the cucumbers, and pound lightly with a pestle or rolling pin until cracks appear.

4Cut the cucumbers into any shape.

5I prefer to quarter it lengthwise, then into 4 equal pieces.

6Add cucumbers to the marinade.

7Let it rest in the refrigerator for 12 hours.

8As the marinade will not thoroughly cover the cucumbers, mix the top and bottom cucumbers after 6 hours or so.

9Serve the amount you want to eat.

10It's best to eat the well marinated cucumbers from the bottom first.

11After a day, the cucumbers have shrunken and the acidity is slightly stronger.

12Eat within two days!

13Use a zip lock bag to marinate the cucumbers!
