  • 12 small to medium red potatoes, halved or quartered
  • 3 Tbsp. water
  • 1 tsp. light oil (any kind)
  • 1 (8 oz.) jar medium hot salsa
  • 1 large tomato, chunked
  • 3 green onions, sliced
  • 1 Tbsp. cilantro

    Microwave potatoes, water and oil approximately 5 to 10 minutes or until just tender (do not overcook).

    Drain.

    Combine cilantro, potatoes, tomatoes and green onions; cook for 1 minute to warm.

    Add salsa; stir and serve warm or cool.
