- 12 small to medium red potatoes, halved or quartered
- 3 Tbsp. water
- 1 tsp. light oil (any kind)
- 1 (8 oz.) jar medium hot salsa
- 1 large tomato, chunked
- 3 green onions, sliced
- 1 Tbsp. cilantro
Directions

1Microwave potatoes, water and oil approximately 5 to 10 minutes or until just tender (do not overcook).

3Combine cilantro, potatoes, tomatoes and green onions; cook for 1 minute to warm.

4Add salsa; stir and serve warm or cool.

5Can be rewarmed as necessary.
