Spicy Rice

  • 1/2 c. chopped celery
  • 1/2 c. chopped onion
  • 1 Tbsp. butter
  • 1/8 tsp. allspice
  • 1/2 tsp. cinnamon
  • salt and pepper to taste
  • 1 Tbsp. brown sugar
  • 3 c. cooked rice
  • 1/2 c. raisins (plump) *
  • 2 tart cooking apples, cored, peeled and sliced
  • 1/2 c. sliced almonds

Directions

    In large skillet, cook celery and onion in butter until crisp. Stir in seasonings, rice and raisins.

    Heat thoroughly.

    Stir in apples.

    Remove from heat.

    Cover and let stand 5 minutes. Sprinkle with almonds.
