- 3 egg yolks, beaten
- juice and rind of 2 lemons, juice strained
Directions

1Cream the sugar and butter together, then beat and add beaten egg yolks, lemon juice and rind.

2Cook slowly in double boiler until mixture gets thick.

3Delicious used as a spread on bread or a filling for tarts or sponge cake.
