Spicy Shrimp Platter

  • 5 tbsp butter, softened
  • 3 cloves garlic, crushed
  • 1-2 None red chili peppers, seeded and chopped
  • 9 None thick slices ciabatta bread
  • 1 tbsp olive oil
  • 1 lb large shrimp, peeled and deveined
  • 1 cup mayonnaise
  • 2 tsp grated lemon peel
  • 2 tbsp lemon juice, or to taste
  • None None Cherry tomatoes, to serve

    Preheat the oven to 400°F. Mix butter, garlic and chili pepper in a small bowl. Spread the bread with 2/3 of the butter. Place on a baking sheet. Bake for 6-8 mins until golden. Cut into fingers.

    Meanwhile, heat remaining butter mixture and oil in a large skillet on medium-high heat. Cook shrimp for 2-3 mins until cooked through.

    Mix mayonnaise, and lemon peel and juice in a small bowl. Place shrimp, ciabatta bread fingers and cherry tomatoes on a platter. Serve with lemon mayonnaise for dipping.
