Spicy Spanish Meatballs

Ingredients

  • 2/3 lb ground beef
  • 1 None egg yolk
  • 2 tbsp breadcrumbs
  • 2 None small onions, finely diced
  • 2 None garlic cloves, finely diced
  • 1 None chili, finely sliced
  • 2 tbsp sunflower oil
  • 2 tbsp olive oil
  • 2 None ripe tomatoes, chopped
  • None None Juice of 1/2 lemon
  • 3 tbsp finely chopped parsley

Directions

    Place the ground beef, egg yolk, breadcrumbs, half the onion, half the garlic and half the chili in a mixing bowl and mix until fully combined. Form the mixture into 15 small meatballs.

    Heat the sunflower oil in a frying pan, add the meatballs and fry for 5-8 mins.

    Meanwhile, heat the olive oil in a saucepan, add the remaining onions and saute for 1-2 mins. Add the garlic and chilli and saute for a further 30 seconds- 1 min. Stir in the tomatoes and lemon juice then add the meatballs and simmer for 3-5 mins. Transfer to serving bowls and sprinkle with parsley. Serve.
