Spicy Spinach Dip

  • 1 package (10 Oz) Frozen Chopped Spinach, Thawed And Drained
  • 8 ounces, weight Cream Cheese, Softened
  • 16 ounces, fluid Hot Salsa
  • 1 Tablespoon Red Wine Vinegar
  • 2 cups Shredded Pepper Jack Cheese
  • 1 can Chopped Black Olives (2 Oz)
  • Salt And Pepper, to taste

Directions

    Squeeze and excess water out of spinach (if its too wet the dip will be watery).

    In a mixing bowl, combine spinach and cream cheese.

    Stir in salsa and vinegar.

    Add cheese and olives.

    Salt and pepper to taste.

    Transfer to an oven safe bowl and bake at 400F until bubbly.

    (I usually check it at about 12 minutes, give it a stir to make sure it all melts well, and then bake it another 3-5 minutes.)

    Serve warm, with tortilla chips.
