- 9 -10 large ripe tomatoes, peeled, quartered and seeded
- 2 onions, peeled and quartered
- 4 -5 canned chipotle peppers, in adobo sauce
- 1 -3 jalapeno, seeded
- vinegar, to taste
- kosher salt, to taste
Directions

1Pulse tomatoes, onions and chipotle peppers in a food processor until coarsely ground.

2Add jalapenos, one half at a time, taste testing after each addition.

3When the salsa has reached the desired spiciness, add vinegar, one tablespoon at a time, and salt, one teaspoon at a time, until seasoned to your taste.

4This freezes beautifully -- if it lasts long enough!
