Spicy Veal Pizzaiola

- 2 tsp olive oil
- 2 cloves garlic, minced
- 2 oz pancetta, finely chopped
- 1/4 cup dry white wine
- 4 cups tomato sauce
- 1 tsp dried chili flakes
- 4 (6 oz) veal cutlets
- 2.5 oz baby spinach
Directions

1Heat oil in a large saucepan over medium-high heat. Cook garlic and pancetta, stirring, for 5 mins. Add wine and cook, stirring, until reduced by 1/2. Add tomato sauce and chili. Simmer for 15 mins, or until sauce thickens.

2Preheat broiler. Broil veal until cooked to your liking. Transfer to serving plates. Stir spinach into tomato sauce then spoon over veal. Serve.
