- 1/2 teaspoon vegetable oil
- 2 green onions, chopped
- 1 sweet red pepper
- 1 garlic clove, minced
- 2 tomatoes, chopped
- 1 zucchini, diced
- 1 cup chickpeas, cooked
- 1 cup boiling water
- 1/4 teaspoon salt
- 1/2 teaspoon curry powder
- 1 teaspoon ground cumin
- 2 tablespoons fresh parsley
- 1/8 teaspoon ground cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon cayenne
- 1 cup couscous
Directions

1In a medium-size skillet heat the oil.

2Add green onions, sweet pepper, garlic, tomatoes and zucchini; saute 5 min, stirring.

3Remove from heat and keep warm.

4In a medium-size saucepan, combine the remaining ingredients, mix, cover and let stand 5 minutes, until liquid is absorbed. Add the first mixture and fluff with a fork.
