- 1 pkg. frozen spinach
- 4 oz. Swiss cheese
- 6 to 8 extra large eggs
- 1 c. half and half
- 1 c. evaporated milk
- 2 pie crusts
- 1 1/2 c. bacon bits
- 1/2 c. sauteed onions
- 1 tsp. salt
- 1/2 tsp. ground white pepper
- 1/8 tsp. ground nutmeg
Directions

1Prebake pie crust about 5 to 10 minutes.

2Mix eggs and remaining ingredients.

3Whip with wire whisk or mixer until thoroughly mixed.

4Pour into prebaked pie crusts.

5Bake at 325° for 30 to 40 minutes.

6Done when liquid is on top and pie splits and browns.

7It will feel firm.

8Makes 2 pies.

9One cup ham could be substituted for spinach and bacon.
