Spinach And Bean Burrito

- refried beans (enough for 2)
- 1 handful fresh spinach
- Cheddar cheese (a handful), grated
- 1 can fresh Ortega chili salsa
- 1/2 c. brown rice, cooked
- guacamole or smashed avocado or sour cream (good on top)
- 2 big tortillas
Directions

1Steam spinach until cooked.

2Warm tortillas over flame or in frying pan.

3Put cheese and beans on tortilla.

4Microwave until beans are hot and cheese is partly melted.

5Add spinach, Ortega chili, salsa and rice (if you want).

6Roll up burrito and add a topping.

7Makes a deliciously filling burrito.
