  • 1 1/3 c. all-purpose flour
  • 1/8 t. salt
  • 1/2 c. (1 stick) plus 1 t. butter, chilled and cut into pieces, divided
  • 2 - 3 T. ice water
  • 1 pkg. (10 oz.) fresh baby spinach, washed
  • 1 c. light cream or half and half
  • 3 eggs
  • 1 c. (4 oz.) shredded Swiss cheese
  • 1/2 c. (2 oz.) Havarti or other white cheese, cubed

    Mix flour and salt in large bowl.

    Cut in 1/2 cup butter until coarse crumbs form.

    Add water, tossing with fork, until dough forms.

    Press into a firm ball.

    Wrap and refrigerate 30 minutes.
