- 2-3 tablespoons Butter or Olive Oil (or combination)
- 5 Medium Shallots, Thinly Julienned
- 8 Cloves of Garlic, Thinly Julienned
- 16 ounces Frozen Peas
- 8-10 ounces Baby Spinach
- 1/4-1/3 cups Vegetable Stock or Water
- Salt and Pepper to Taste
- 1 tablespoon Butter (optional)
Directions

1Slowly caramelize Shallots and Garlic in Butter/Olive Oil.

2Add frozen peas and toss to coat. Lightly season.

3Add spinach, and toss to cover with peas. Lightly season.

4Add 1/4 to 1/3 cup of stock, cover and simmer until spinach is wilted and peas are softened, but still vibrant.

5Check seasoning and finish with a knob of butter, if so desired (and why wouldn't you?).
