  • 1 whole Small Chopped Onion
  • 1 dash Olive Oil (for The Onions)
  • 1/2 pounds, 2-5/8 ounces, weight Fresh Spinach Leaves
  • 3-5/8 ounces, weight Rucola (or Arugula)
  • 6 whole Eggs
  • 1-7/8 ounces, weight Grated Mature Cheddar Cheese
  • 1 pinch Salt And Pepper

Directions

    Gently fry the chopped onion over medium heat with a bit of olive oil. Cook until onion is softened.

    Wash the spinach and the rucola, drain them, and add them to the pan with the onions, cooking until the water has evaporated then remove from heat.

    In a medium sized bowl, beat the eggs with a fork, add the grated cheese, and the onion, spinach and rucola mixture. Adjust seasonings with salt, pepper.

    Gently grease a cake tin and pour the mixture into it. Bake at 180C degrees for about 40 minutes or until golden on top. Serve hot or cold.
