Spinach Apple Sauté

  • 1 tablespoon vegetable oil
  • 1/3 cup raisins
  • 1 garlic clove, minced
  • 1/2 cup pine nuts (or pumpkin seeds, or raw cashews)
  • 2 gala apples, cored and chopped
  • 1/3 cup Italian sausage, cooked
  • 6 ounces fresh Baby Spinach
  • 1 teaspoon parmesan cheese

Directions

    Heat oil over medium heat. Saute raisins, garlic and nuts until garlic is cooked but not browned.

    Add apple and saute until softened, about 5 minutes. Add sausage to reheat. Add spinach and cook until wilted. Sprinkle with cheese for serving.
