- 1 tablespoon vegetable oil
- 1/3 cup raisins
- 1 garlic clove, minced
- 1/2 cup pine nuts (or pumpkin seeds, or raw cashews)
- 2 gala apples, cored and chopped
- 1/3 cup Italian sausage, cooked
- 6 ounces fresh Baby Spinach
- 1 teaspoon parmesan cheese
Directions

1Heat oil over medium heat. Saute raisins, garlic and nuts until garlic is cooked but not browned.

2Add apple and saute until softened, about 5 minutes. Add sausage to reheat. Add spinach and cook until wilted. Sprinkle with cheese for serving.
