Spinach-Apple Toss

  • 1/2 to 1 lb. spinach
  • 2 tart, red apples
  • 8 slices bacon, fried crisp and crumbled
  • 2/3 c. mayonnaise or salad dressing
  • 1/3 c. orange juice concentrate, thawed

    Wash spinach; remove stems and tear the leaves into bite size pieces.

    Dry with paper towels and chill.
  3. 3
    Just before serving, quarter and slice unpared but washed apples with cores removed. Slice into large chilled salad bowl.

    Add spinach and bacon and toss.

    Mix well the mayonnaise and orange juice concentrate. Serve dressing separately to spoon over salad.
