Spinach Balls

Ingredients

  • 2 (10 oz.) pkg. frozen chopped spinach
  • 2 c. seasoned herb stuffing mix
  • 1 c. grated Parmesan cheese
  • 1 clove garlic, minced
  • 4 eggs
  • 3/4 c. melted butter
  • 1/2 tsp. thyme
  • pepper to taste

Directions

    Cook and drain spinach; squeeze dry.

    Mix remaining ingredients in a bowl with spinach.

    Cover; chill for 2 hours. Form into 1-inch balls.

    (May be frozen at this point.)

    Place on cookie sheet.

    Bake for 30 minutes in a 300° oven.

    Makes about 2 1/2 to 3 dozen balls.
