Spinach Balls

Ingredients

  • 2 (10 oz.) pkg. frozen chopped spinach
  • 3 c. herb seasoned stuffing mix (crushed)
  • 1 large finely chopped onion
  • 6 well-beaten eggs (I used Egg Beaters)
  • 3/4 c. melted butter or margarine
  • 1/2 c. Parmesan cheese
  • 1/2 c. grated Italian cheese (example Mozzarella)
  • 1 tsp. pepper
  • 1/2 tsp. garlic salt
  • 1/2 tsp. thyme

Directions

    Cook spinach, drain and squeeze out excess.

    Combine spinach and all other ingredients.

    Mix well.

    Shape into 3/4-inch balls and place on lightly greased cookie sheet.

    Bake at 350° about 20 minutes.
