Spinach Balls

Ingredients

  • 2 boxes frozen spinach, chopped, cooked and drained well (squeeze out all liquid)
  • 2 c. herb stuffing mix
  • 1 onion, chopped fine
  • 6 eggs, beaten
  • 3/4 c. margarine
  • 1/2 c. Parmesan cheese, grated
  • 1 tsp. garlic powder
  • 1 tsp. pepper
  • chopped water chestnuts (optional)
  • bacon bits (optional)

Directions

    Mix all ingredients together and form into bite-size balls. You may freeze them at this point.

    (If frozen, take them out 1/2 hour before baking.)

    Place on cookie sheet and bake at 300° for 15 to 20 minutes.

    Serve warm or at room temperature.
